when it comes to shuangliao, my hometown, it is not only beautiful in scenery, but also famous in the world for all kinds of snacks. a bite of it will make your mouth linger and make your aftertaste endless. northeast jiaozi is one of the snacks. lets taste it with me!

今天给姥姥打电话询问了她的酱茄子的作法,自己尝试做了一下,很成功,吃出了家乡的味道。自己仿佛回到了从前,回到那个熟悉的地方。

在和别人谈到自己家乡的时候,我一般都会介绍家乡的美食,比如提到“宫后”,还有黑龙江的锅包肉。但是还有一些美味我很少跟人提,最正宗的应该是姥姥做的酱茄子和手擀面了。酱茄子今天终于得到了姥姥的真传,现在比较怀念手擀面。姥姥做的手擀面比较粗,十分的劲道,加上东北独有酸菜肉末卤,那叫一个过瘾,一般我们叫“二大碗”我能吃两碗。老家的冬天时间很长,所以过冬菜中酸菜是必不可少的,几乎很多家都有自己的酸菜缸和大石头,然而同样是酸菜在不同家腌制,味道也不一样,所以才有了姥姥手擀面的独有味道。如今在盘锦每当我想吃手擀面的时候,都会自己或带上要好的朋友去一家叫“老味道”的面馆,每次都会叫上一碗酸菜肉丝面。但是这家的酸菜没有老家的味道,但是却有一种久违的感觉,于是这里几乎成了我的“老地方”。

说到酱茄子,现在想想嘴边还有种很奇妙的感觉。家乡的夏天,印象中最便宜的两种蔬菜:茄子和豆角,我的印象大约在93,94年左右,茄子应该在7分钱一斤左右,豆角稍微贵一点。可以说伴随每个夏季最多的蔬菜就是茄子和豆角了。那时候,爸爸有道菜挺大众,但很好吃,就是把茄子烀熟了,直接沾酱油蒜末吃。客观的说,妈妈做吃的就很一般了,茄子和豆角到她手里基本都是炖。但一到姥姥家就能吃到她做的酱茄子,这个味道真是太香了,特下饭。

“宫后”这个词,可能是我家乡独有的一个词汇吧。“宫后”其实是烧烤的一种串,具体是什么还真挺难解释,应该是属于下货吧。我印象最早吃到“宫后”应该是小学时,在一家叫“阿旭”的烧烤店吃到的,当时一串羊肉串是5毛,宫后是6毛。现在想想很少能像那时吃着烧烤,最后再下一碗“鲜辣牌”方便面窝个鸡蛋那样的痛快了。最近一次回老家,我又找到了这家叫“阿旭”的烧烤店,尽管更换了地址但老板没有换,他我对我父亲的印象还很深刻,但是那次回家时间比较紧,我还是没有吃到他家的“宫后”,只是在他家吃了顿早餐。

家乡的锅包肉,其实最正宗的叫法应该叫“哈尔滨锅包肉”,但是让我印象比较深刻的应该是带料加工的最好。以前爷爷家那边的厂西市场里有一个专门带料加工做锅包肉的,就是你买好里脊肉,到他那,他个就给你做好,论斤收加工费,整体算下来肯定比在饭店吃便宜,而且味道正宗。总是觉得做锅包肉的醋跟我们平时吃的醋有差别。到辽宁之后,很少能吃到家乡的锅包肉,这边基本都是番茄酱的锅包肉,个人认为没有家乡的味道好。在盘锦有两个地方能吃到家乡的锅包肉,一个是在“双兴”叫“老式锅包肉”,另一个在田家叫“哈尔滨锅包肉”。
